Single Vineyard Saint Catherine Chardonnay 2015
St Catherine is a single vineyard site with a unique character and is winemaker Leon Bester’s personal favourite. He selects only the ripest grapes and uses Burgundian techniques such as whole cluster pressing and fermentation and maturation in French oak barrels with battonage on the lees to bring texture and structure. This pale golden-coloured wine smells of freshly baked brioche or lightly toasted baguette with a smearing of butter. Hints of vanilla and cinnamon continue on to the palate which is smooth, harmonious and well-balanced. This wine can be drunk now but will benefit from several more years of ageing, developing typical Burgundian nutty notes.
